Appetizer: Poached Shrimp Mousse on Shaved Fennel Salad with Sambucca Butter Sauce
Salad: Spinach and Ricotta Cheese “Lasagna” with Tomato, Roasted Garlic Cream Sauce and Crisp Peppered Prosciutto
Entrée - Your Choice: Rosemary Grilled Lamb Loin with Soft Organic Yellow Cornmeal Polenta, Sautéed Green Beans and a Wild Grape Demi Glace Sauce

Pan-Seared (Wild-caught) Fresh Salmon Fillet on Mashed “All Red” Potatoes with Roasted Cauliflower and Lemon, Extra Virgin Olive Oil Vinaigrette
Dessert: “Chocolate Covered Cherry” Torte: Layers of Vanilla Genoise Cake, White Chocolate Buttercream and Cherry Cream, Covered in Bittersweet Chocolate Ganache
